At The Pantri, we can't always guarantee what fresh or frozen food will be on offer. However, there is always one product that we have in the back of our cupboards and will always have on our Pantri shelves - the humble tin of baked beans! In this, the first of our Baked Bean series we will show you how you can take this Pantri staple and turn it into a meal to impress the entire family. Today we're sharing a recipe for baked bean burgers!
As you know at The Pantri, we're all about cutting carbon emissions and helping you lower your carbon footprint. Did you know that meat is one of the biggest contributors to carbon every year? According to an article on The Energy Saving Trust website, 14% of all carbon emissions comes from the production of meat and dairy. This article in The Guardian states that 60% of all emissions in the food production are attributed to meat. Now we don't expect everyone to commit to a full vegan lifestyle, however everyone can make small changes that have a bigger impact. One of the things you and your family could do to help lower your emissions is simply introducing a Meat Free Monday.
These Baked Bean Burgers will absolutely please everyone in your family. They're also a great option if you have a vegan friend coming over for a BBQ and you want to impress them with the extra effort you've gone to for them. They're great with vegan cheese, or traditional if you can't find any vegan alternatives that you like. We really recommend keeping the pickle in the burgers - it's a great flavour combination that works with the cheese and the beans.

Try a tasty vegan alternative for a burger that utilises the most basic pantry options and turns them into a fun option for vegan guests at Summer BBQs.
Heat 1 tbsp oil in a frying pan over a low heat and fry the onion for 5 mins. Stir in the dried herbs and chillies (if using) and cook for 2 mins.
Transfer to a bowl and add the beans, breadcrumbs, potato and parsley.
Mix well, then lightly dampen your hands and shape the mixture into 4 equal patties. Transfer to a plate lined with kitchen paper and chill in the fridge for 10 mins.
Preheat the oven to gas 6, 200°C, fan 180°C and line a baking sheet with nonstick baking paper. Transfer the burgers to the sheet, brush with the remaining oil and bake for 20 mins or until piping hot.
Top each burger with cheese; return to the oven for 3 mins or until melted. Serve in the rolls with the pickle, lettuce and tomato, and chips alongside, if you like.
