One thing you will often find in our Pantri fridge as one of our fresh items in hummus. Hummus is a delicious Middle Eastern dip, made from mashed chickpeas. Traditionally, hummus is served with a selection of crudités or with warmed pitta bread. However, it can be hard to think of complete meals with this ingredient, usually it’s served as a side dish or a starter. In this Roasted Hummus pasta recipe, we’re making Hummus the star! We’ll show how you can make a dip, into a family favourite pasta sauce.

This is a super easy and quick recipe to make, much like our Mango Salsa Wraps. Our Community Cookbook recipes will always focus on simple, fast, family friendly recipes. We also are creating meals that can be made from your kitchen pantry staples. This recipe is naturally vegan, so includes some items that we assume will form the part of any vegan cooks pantry – Nutritional yeast, lemon juice and dried herbs.

Will we get enough protein?

You really don’t need to worry if you’re getting enough protein with this dish. Chickpeas are part of the legume family and as a result are packed with natural plant protein. Every 100g of chickpeas contains 19g of protein. They are also high in fibre, contain iron, phosphorus and folate. Chickpeas are also a low GI food meaning they will keep you fuller for longer.

Nutritional yeast, or it’s vegan slang term “nooch” is an inactivated version of the yeast you’d use to make bread or beer. Like chickpeas, nooch is also packed with plant protein. Studies show that nutritional yeast offers several potential health benefits, ranging from lower cholesterol to protection from cellular damage that leads to disease. This Roasted Hummus Pasta Recipe is not only incredibly tasty but comes packed with added health benefits too – what’s not to love!

Top Tips

Now we understand that not everyone subscribes to a vegan lifestyle. For those of you that enjoy meat in your diet we recommend frying some bacon lardons and sprinkling these on the top of your dish. Wilted spinach also works well if you would like a little more green on your plate. The flavour of hummus you get will also alter the flavour of this dish so you may wish to adjust your garlic accordingly. Although we believe you can never have enough garlic! Our final tip is to make sure you slice the cherry tomatoes before you roast them. This makes mashing them into the sauce a lot easier and safer – no one wants a hot cherry tomato pip to the eye.

  1. Preheat the Oven

    Preheat the oven to 200 degrees. 

  2. In an oven proof dish

    Add the sliced cherry tomatoes, garlic cloves and 1 tbsp of olive and toss to combine.  Make a well in the centre and add the hummus.

  3. Top your hummus

    Top the hummus with the herbs - basil, oregano and rosemary, then add the remaining olive oil.  Place in the oven and roast for 35-40 minutes.

  4. Prepare the pasta

    Cook your pasta as per the packet instructions, ensuring you reserve one cup of the pasta water.

  5. Make the sauce

    Once the tomatoes and hummus is cooked, remove from the oven and carefully mash the tomatoes and garlic.  Mix everything together to make a thick sauce.

  6. Add the remaining ingredients

    Add the lemon juice, reserved pasta water, sun-dried tomatoes and nutritional yeast.  Stir well to complete your sauce.

  7. Combine with Pasta

    Add your pasta, and toss to ensure it is coated in the sauce.  Season with salt and pepper to taste.  

    Serve and enjoy!
