We might have been a little guilty of focusing solely on meat free recipes so far. We aim to correct that today. Slight confession we have a vegan writing for us – can you tell? Meat-free meals are a great way to cut down on your carbon footprint, which is our main mission at The Pantri. However, we also have a wide selection of meat and poultry products available on a weekly basis. This Mango salsa chicken wraps recipe is a perfect mid week family pleasing recipe.

Mango salsa is a lovely refreshing addition to your wraps, and is a great accompaniment to chicken. If you don’t have wraps, this would make a really filling salad. The salsa itself could be served with some tortilla chips as a great snack for entertaining. We love any opportunity to sneak extra fruit into our families and this is great! Your children will love the sweetness of the mango.

All these ingredients were readily available at The Pantri, meaning they would form part of your £4 basket of food.

Cook the Chicken

Before you make the mango salsa you need to prep your chicken. We like to add a little spice to our chicken before cooking. This gives the mango salsa chicken wraps a little more depth. For this recipe we’ve used a generous coating of smoked paprika. You could sub the spice for your own favourite. A whole chicken takes around one hour and 25 minutes to cook depending on your oven settings. Once your chicken as cooked, shred it ready for constructing the wraps.

Make the Salsa

This simple and colorful mango salsa is super easy to make! It’s sweet, spicy and absolutely delicious. It’s really worth the extra effort and will be a real people pleasing recipe. You can play around with the heat of this salsa depending on your personal preference.

How would you serve yours? You could just enjoy the wraps as part of your lunch and batch cook for the week. Alternatively you can serve them with chunky potato wedges for a more filling main meal.
