Sweetcorn fritters are a brilliant, versatile low-cost option that are incredibly family friendly. You can guarantee that there will always been tins of sweetcorn available at on our Pantri shelves. This recipe is a firm favourite with us because it is one you can make with your pantry staples. These fritters are great and make a great accompaniment to a main meal. They would make a fantastic brunch served with some eggs or avocado salsa. Or are just a great between meal snack for your children in insatiable appetites.

It can be hard to sneak vegetables into the fussiest of children (and adults – let’s be honest). These Sweetcorn fritters are the perfect opportunity to get an extra veggie into their meals. Top tip – you can amend this recipe and the sweetcorn to be blitzed to form a batter, so even the most eagle eyed anti-veggie child could be fooled.

This also makes the perfect brunch recipe. Great for a lazy Sunday late morning. Imagine a yummy stack of fritters with fresh avocado salsa and a beautiful poached egg! It makes a great alternative to a pancake stack and is sure to impress any friend you have over for brunch.

Sweetcorn fritters are a brilliant, versatile low-cost option that are incredibly family friendly. You can guarantee that there will always been tins of sweetcorn in your cupboard and this is a great recipe that you can try for different times of the day.

  1. Prepare the batter

    Mix the flour, baking powder, paprika and milk together in a large bowl. Mix in the egg, followed by the sweetcorn, chopped spring onions, chives, parsley, 1 tsp salt and some freshly ground black pepper.

  2. Fry your fritters

    Heat a 1cm depth of oil in a frying pan over a medium heat until a small amount of the fritter mixture sizzles when dropped in. For larger fritters, drop 2 heaped tablespoons of the mixture into the pan at a time in a clockwise direction (this will help you remember the order they were added to the pan, so you can flip them at the right stage). For smaller fritters, do the same, but with 1 heaped tablespoon of mixture at a time.

  3. Flip the fritters

    After 2 mins, flip the fritters over in the same order they were added to the pan. Cook for another 2 mins, continuing to turn every now and then to ensure both sides are evenly golden brown. When ready, the fritters should be darker brown with crispy pieces of corn at the edges – be careful, as some of the kernels may burst during the cooking process. Remove to a wire rack and pat away any excess oil using kitchen paper. Serve straightaway with a few strips of spring onion scattered over, if you like.
