It’s official Autumn, which means Winter is just around the corner and it’s time to dig out your jumpers and start planning warm, comforting meals. Nothing is more comforting to us than a casserole and this sausage cowboy casserole is the perfect recipe this autumn season.

Cowboy casseroles, often referred to as cowboy skillet meals or cowboy bakes, are one-pot wonders that showcase the essence of cowboy cooking. They’re characterized by their simplicity, reliance on staple ingredients, and the ability to feed a hungry group with minimal fuss. Traditional cowboy casseroles are typically composed of ground meat, beans, vegetables, and a starch like potatoes or biscuits, all baked together in a single pan. In this recipe we’ve used sausages as our meat component making this lovely warming sausage cowboy casserole.

Sausage Cowboy Casserole

  1. Start with the sausages

    Start by browning off the sausages. You don’t need to cook all the way through, simply add a little colour.  Cut them in half and set aside.

  2. Fry your onion

    Dice your onion and In a little oil on a medium heat, sweat it till softened.  Add the sausages back into the pan.

  3. Add all your other ingredients.

    Add your stock cubes. Next, we just need to add all the other ingredients! Add the tins of tomatoes, beans and sweetcorn. Add your herbs. Add your frozen peas and half you potatoes and add them. Add some water to make sure all the ingredients are submerged. Let it cook on a low heat for 30 mins to an hour, stirring occasionally until the potatoes are cooked and you are ready to eat!

Note

You can make this recipe vegan by switching the sausages to a vegan variety and substituting the stock cubes for vegetable ones.
