Start by browning off the sausages. You don’t need to cook all the way through, simply add a little colour. Cut them in half and set aside.
Dice your onion and In a little oil on a medium heat, sweat it till softened. Add the sausages back into the pan.
Add your stock cubes. Next, we just need to add all the other ingredients! Add the tins of tomatoes, beans and sweetcorn. Add your herbs. Add your frozen peas and half you potatoes and add them. Add some water to make sure all the ingredients are submerged. Let it cook on a low heat for 30 mins to an hour, stirring occasionally until the potatoes are cooked and you are ready to eat!
You can make this recipe vegan by switching the sausages to a vegan variety and substituting the stock cubes for vegetable ones.
